Are you guys sick of the pumpkin flavored everything? I’m not! I love it! I know it can become a little excessive once cooler temps arrive. It all starts with the Starbucks pumpkin spice latte. Once that hits the stores it seems like Fall has officially begun. (Even though I think they brought it back September 1st.) But then there are pumpkin muffins, pumpkin bread, pumpkin ravioli, pumpkin soup… and you know what? I freakin’ LOVE it all! Because it’s a temporary thing. If it were all year long, then yeah, I’d be sick of it too. But it’s a flavor that gets me PUMPED about Fall. Once Winter gets here it’ll be all peppermint and gingerbread, then after that I’m pretty much ready for everything tropical to bring on the summer!
So since I’m already in a pumpkin mindset, you can imagine my excitement when I was browsing through the liquor store and saw that Kahlua makes a limited edition Pumpkin Pie Spice!! Shut UP. I was so excited to look up some yummy recipes later that night and break that sucker open, but then was so bummed to find that every recipe had a bunch of ingredients that I either didn’t have, or were SUPER fattening. (I’m talking heavy cream.) Now I’m not delusional… I know the liquor itself isn’t exactly healthy. But when I’m treating myself to a yummy drink I don’t want to go completely overboard and rack up the calories to the point I might as well just be eating a giant pumpkin pie! So I looked at what I already had on hand and came up with my own recipe… a lighter, “skinnier” version that’s still SO yummy! (The hubby even approved!)
SKINNY PUMPKIN PIE COCKTAIL:
- Kahlua Pumpkin Pie Spice
- Pinnacle Whipped Cream Vodka
- Unsweetened Vanilla Almond milk
- Light whipped cream (optional)
- Pumpkin pie spice (optional)
- Graham crackers, crushed (optional)
Crush some graham crackers onto a plate. Wet the rim of your glass, turn it upside down and dip the rim in the crackers. Fill the glass with ice. Pour in 1 part Kahlua Pumpkin Pie Spice, 1 part Pinnacle Whipped Cream Vodka, then 2 parts unsweetened vanilla almond milk. Stir. Top with light whipped cream and sprinkle with pumpkin pie spice.
Sip and celebrate Fall and all things PUMPKIN!
